This recipe was developed by Chuck Williams of Williams-Sonoma fame for baking in a cloche ceramic baking dish. It also works wonderfully well in a bread machine. Easy and satisfying.
CHUCK WILLIAMS COUNTRY FRENCH BREAD
- 1 2/3 cups water
- 3 cups bread flour
- 1 cup whole wheat flour
- 1 tablespoon gluten
- 2 teaspoons salt
- 2 1/4 teaspoons SAF yeast
Place all the ingredients in the pan according to the order in the manufacturer's instructions. Set crust on dark and program for Basic or French Bread cycle. Press start
When the baking cycle ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.
Makes a two-pound loaf.
