This is one of those dishes that came from wanting to do something with the beautiful new red potatoes that were sitting on the counter. Then opening the refrigerator and rummaging around in the vegetable crisper to see what was there.
I found orange, green and yellow bell peppers. There was also some celery,parsley and the remains of a red onion. I was well on my way to thinking of a conventional potato salad when I spied what was left of a pound of bacon.
Potato Salad with Bacon
(6 servings)
- 2 pounds of new potatoes,
- 1/2 each of a yellow,orange and green bell pepper diced
- 1/2 red onion diced
- 3 stalks of celery, diced
- 6 slices of bacon
- White Vinegar to taste
- Chopped fresh parsley to taste
- Salt and freshly ground pepper to taste
Boil the unpeeled potatoes until cooked through. Let cool and then slice into rounds.
Cut the bacon into lardon-sized strips and cook until crisp. Remove the bacon and reserve the fat.
Combine the potatoes, the diced bell peppers,onion, celery ,parsley and bacon strips. Pour the reserved bacon fat over the mixture and combine well. Sprinkle the vinegar over the mixture and combine. Taste to see if you want to add more vinegar. Add salt and pepper and taste again.
A happy experiment and one of the best potato salads I've ever made.
